Hawthorn Tea

Hawthorn Tea is a sweet, lemony herbal drink that makes a full liter at once, enough for a crowd. A single hawthorn tea bag is simmered with fresh rosemary, sage and ginger, so the result tastes savory and warming rather than flowery. Lemon juice and a little sugar brighten it. Some people drink it when they feel a cold or sore throat coming on, and it takes only about ten minutes.
Instructions
Put the water in a pot with the hawthorn tea bag, the rosemary and sage leaves, and the ginger slices. Bring it to a boil for a short time, then take the pot off the heat.
Leave the tea to steep for 5 to 10 minutes. The longer you leave it, the stronger the herbal and ginger flavors will be.
Strain the tea to remove the tea bag, herb leaves and ginger. Stir in the sugar and the lemon juice until the sugar has dissolved.
Let the tea cool, then serve it.
