Herbed Corn
Herbed corn is a quick grilled side that cooks sweet corn in its own seasoned butter. The foil packet traps the steam, so the kernels turn tender while the parsley, chives and thyme melt into them. A small pinch of cayenne gives the butter a mild background heat without hiding the sweetness of the corn. You mix the butter in one bowl, and seven ears are ready in about twenty minutes, which suits a summer cookout.
Instructions
Put the softened butter, parsley, chives, thyme, salt and cayenne in a small bowl. Mix until the herbs and seasonings are evenly spread through the butter.
Husk the corn and pull off all the silks. Spread about 1 tablespoon of the herb butter over each ear.
Wrap each buttered ear in a sheet of heavy foil, sealing it well so the butter stays inside.
Grill the wrapped ears over medium heat for 10 to 15 minutes. The corn is done when the kernels are tender when pierced.
