Herbed Tomato Soup
Herbed tomato soup is a quick pantry-based pot that goes from onion to bowl in about an hour. Canned diced tomatoes and tomato sauce give it body, while fresh basil and thyme do the seasoning, with dried herbs as a fallback. The optional splash of balsamic vinegar stirred in at the end sharpens the sweetness of the tomatoes. Use vegetable broth and it becomes a fully meatless soup.
Instructions
Warm the olive oil in a 2-quart saucepan and add the diced onion. Cook it gently until it is soft and translucent but has not taken on any brown color.
Add the diced tomatoes, broth, tomato sauce, basil, thyme and pepper to the pan. Stir everything together and bring the pot to a boil.
Turn the heat down, cover the pan and let the soup simmer for 20 minutes so the herbs soften into the tomato base.
Just before serving, stir in the balsamic vinegar if you are using it. Ladle the soup into bowls and scatter thin strips of fresh basil over the top.
