Hlib tmer is a date milk from the Algerian Sahara, made by cooking ripe dates into a syrup and stirring it into a cup of milk. Camel milk is the traditional choice, but cow milk or soy milk works well where it is hard to find. The dates supply most of the sweetness, so only a little sugar is needed. It takes about fifteen minutes.

Instructions

Remove the seeds from the dates and look inside each one to make sure there are no worms.

Put the dates in a pot with water and a little sugar. Boil them for a few minutes, until the dates are soft and well cooked.

Take the pot off the heat and blend the mixture. Strain it as thoroughly as you can so the syrup is smooth.

Pour the date syrup into a cup of milk and serve.

If you prefer, simmer the dates directly in the milk over low heat until the milk turns a nice brown colour, then strain it.
