Hobo Burgers

Hobo burgers are a campfire dinner cooked in a foil packet, with the patty, potatoes and onion all done in one parcel. The cabbage leaves are the clever part. They sit between the meat and the foil, holding in moisture and taking the scorching so the beef does not burn on the coals. Butter and Worcestershire sauce season everything as it steams, and cleanup is just foil.

Instructions

Work the Worcestershire sauce into the ground beef with your hands until it is evenly mixed. Divide the meat into four portions and shape each into a patty.

Cut four large sheets of heavy duty aluminium foil. Set a cabbage leaf on the shiny side of each sheet, then lay a beef patty on top of each leaf.

Cover each patty with sliced onion and potato. Add a pat of butter to each portion and season with salt and pepper.

Wrap a second cabbage leaf over the top of each portion, then fold the foil around it and seal the package closed.

Set the packages on medium-hot coals and cook for about 20 to 30 minutes. Turn them twice during cooking, handling them carefully so the seals stay shut.

Open a package to check that the beef is cooked through and the potatoes are tender. If the cabbage leaves have charred, throw them away before eating.
