Homemade Baharat

Homemade baharat is a warm, peppery spice blend that you can grind in one batch and keep ready for the cupboard. Allspice and black pepper make up the bulk, with cinnamon and coriander in the middle and nutmeg, cloves and cardamom in small amounts. Mixing it yourself lets you control freshness, and frying a spoonful in butter before cooking brings out more of its aroma.

Instructions

Measure all of the spices into a mill or spice grinder. If you are starting with whole spices, work in small batches so everything breaks down evenly.

Grind until the mixture is a fine, uniform powder with no visible bits of husk or pepper.

Tip the powder into a bowl and stir well so the stronger spices, such as cloves and cardamom, are spread evenly through the blend.

For a deeper flavor, fry a portion of the powder in a little butter just before you use it. Keep the rest dry for later.
