Homemade Coffee Liqueur
Homemade coffee liqueur is a sweetened coffee and spirit mix that you can tune to your own taste. Because you control the sugar and the base, you can keep it lean with vodka or make it rounder with rum. Vanilla beans steep in the bottle for a week, and the daily shake is the only work once the syrup is made. Stir it into milk or pour it over ice.
Instructions
Pour the cold brewed coffee into a large saucepan and add the sugar. Heat over medium heat, stirring all the time, until you can no longer see or feel any sugar grains on the bottom of the pan.
Take the pan off the heat and let the syrup cool to room temperature. Stir in the vodka or rum once it has cooled.
If you are using vanilla beans, scrape out the seeds and add them to the mixture along with the empty pods. If you are using vanilla extract, stir it in instead.
Pour everything into a glass bottle or jar and seal it tightly. Keep it in a cool, dark place for at least one week, and give it a gentle shake each day.
After the week, strain out the vanilla pods and any sediment. Pour the clear liquid back into the bottle for storage.
