Homemade Peanut Butter
Homemade peanut butter needs only a handful of pantry items and a food processor, and you decide exactly what goes into the jar. Roasting the raw peanuts with a little oil deepens their flavor before grinding, and olive oil helps the paste loosen into a spreadable texture. Sugar and honey are optional, so you can keep it plain and salty or sweeten it lightly. Stop processing early for a crunchy jar, or keep going for smooth.
Instructions
Put the raw peanuts in a bowl with the vegetable, peanut or canola oil and toss them until they are lightly coated.
Line a baking pan with tinfoil and spread the peanuts on it. Bake them for about 10 minutes, using an oven setting somewhere between 200 and 350 °F.
Take the pan out and let the peanuts cool completely before you handle them.
Tip the cooled peanuts into a food processor or blender and add the olive oil. Process for a good while, scraping down the sides as needed, until the peanuts break down into a paste.
Add the sugar and honey if you want them, along with the pinch of salt. Process again until the peanut butter is as smooth or as coarse as you like it.
