Hominy Grits

Hominy grits are a plain pot of ground corn, boiled in water and finished with a spoonful of butter, and this version comes from Effigy Mounds National Monument. The method is short: add the grits slowly to boiling water, then let them cook gently on low heat. The result is a mild, creamy base that takes sweet toppings like maple syrup or savory ones like cheese, egg, ham, or sausage.

Instructions

Bring the water to a rapid boil in a saucepan.

Stir the grits into the boiling water a little at a time, so they do not clump.

Turn the heat down to low and stir in the butter.

Cook for 20 minutes, stirring now and then, until the grits are thick and the water has been absorbed.

If you want a sweet bowl, stir in the honey, brown sugar, or maple syrup, or top with jelly. Serve hot.
