Honey Gingerbread Cookies

These honey gingerbread cookies are a straightforward rolled cookie with a spiced dough that comes together in one bowl. Cinnamon and cloves carry the flavor, while a spoonful of honey adds a mild sweetness without a heavy molasses taste. An egg wash gives the baked shapes a light brown sheen, and a stiff white icing piped from a snipped bag lets you decorate them as plainly or as elaborately as you like.

Instructions

Put the flour, butter, 190 g of powdered sugar, honey, two of the eggs, cinnamon, baking soda and cloves in a bowl. Mix until you have a smooth dough.

Beat the remaining egg in a small bowl and set it aside for glazing.

Divide the dough into 5 or 6 portions. Roll one portion out to about 3 mm thick and keep the rest covered while you work.

Cut shapes with cookie cutters and move them to a baking sheet lined with parchment. Once the sheet is full, brush the cookies with the beaten egg.

Bake at 180°C for a few minutes, until the cookies are light brown. Repeat the rolling, cutting, glazing and baking with the remaining portions.

For the icing, stir the egg white together with 150 g of powdered sugar. If it is not stiff enough to hold its shape, add more sugar until it is firm.

Spoon the icing into a piping bag or a plastic bag and snip a tiny opening, about 1 mm, at the tip. Squeeze gently to pipe decoration onto the cooled cookies.
