Honey Mustard Salad Dressing
This honey mustard dressing takes 15 minutes and needs nothing more than a bowl and a whisk. Dijon gives it body and bite, lemon juice keeps the honey from turning cloying, and safflower oil has a mild flavor that lets the mustard come through. The oil goes in slowly so it emulsifies into a creamy dressing. It works as a plain base you can adjust to taste.
Instructions
Put the mustard, honey, lemon juice, salt and pepper in a mixing bowl. Stir them together until the honey has dissolved and the mixture looks even.
Set the bowl on a folded towel so it stays put while you whisk. This leaves both hands free for the next step.
Whisk constantly while adding the safflower oil in a slow, thin stream. Adding it gradually lets the oil blend into the mustard base instead of floating on top.
Keep whisking until all the oil is in and the dressing is thick and creamy, with no separate layer of oil. Taste it and use it on salad right away.
