Hoppin John is a Southern dish of black-eyed peas and rice, traditionally eaten on New Year's Day. This version cooks everything in one Dutch oven, starting with bacon fat that flavors the onion, celery and bell pepper before the rice goes in. Canned peas and boxed rice keep the work short. Jalapeños and bacon stirred in at the end keep their heat and smokiness distinct, and the pot feeds eight.

Instructions

Cook the diced bacon in a large Dutch oven until browned. Lift it out with a slotted spoon and leave 2 tablespoons of the grease in the pan.

Add the onion, celery and bell pepper to the bacon grease and sauté for 5 minutes, until the vegetables have softened.

Stir in the rice along with its seasoning packet, then add the water and the black-eyed peas. Cover the pot and simmer for 25 minutes, until the rice is tender and has absorbed the liquid.

Return the bacon to the pot and add the diced jalapeños. Cover and heat for 5 to 10 minutes more so everything is hot through, then serve.
