Hot and Spicy Dip
This hot and spicy dip starts with a homemade olive oil mayonnaise and builds a pink, peppery sauce on top of it. Horseradish, cayenne and hot sauce supply the heat, while ketchup and sweet relish round it off with a little sweetness. Because the base is made in a blender, the dip comes together quickly. The recipe also allows soft-boiled yolks or an egg substitute in place of whole eggs.
Instructions
Put the eggs, lemon juice and salt in a blender. Blend for a few seconds until the mixture is combined.
With the motor still running, pour in the olive oil in a slow, steady stream. Keep going until the mixture thickens and turns into a smooth mayonnaise.
Scrape the mayonnaise into a bowl. Add the ketchup, relish or chutney, horseradish, Worcestershire sauce, hot sauce, scallions and cayenne.
Stir until the seasonings are evenly mixed through. Taste, then add more salt and pepper if the dip needs it.
