Homemade Habanero Hot Sauce
This homemade habanero hot sauce is built from six pantry-level ingredients and a blender. Garlic, vinegar and lime juice form a sharp base, salt sharpens it, and a squirt or two of honey rounds off the fruity heat of about ten habaneros. The method is deliberately loose, so you adjust the garlic and acid to your own taste, and every batch ends up a little different from the last.
Instructions
Put the garlic, vinegar, lime juice and salt in a blender, leaving out the peppers and honey for now. Quantities are loose here, but the total liquid should be roughly the volume of 3 to 4 peppers and should reach the middle of the blender blades.
Pulse the mixture until it is smooth.
Add the habaneros and pulse again until they are fairly chopped up but still chunky.
Add the honey and blend for about 30 seconds. The sauce should be fairly thick with only very small bits of pepper and garlic. If you can still see pieces larger than grains of salt, keep blending until they are gone.
