Hutspot (Dutch Mashed Vegetables)
Hutspot is a Dutch mash of potatoes, carrots and onions that turns a few cheap vegetables into a full pot of food. This version adds cubed ham, which cooks alongside the carrots and seasons the water along with them. That water is the useful part, since stirring it back into the mash loosens it and carries the sweetness of the carrots and onions through every spoonful. It feeds six to eight people.
Instructions
Quarter the potatoes and put them in a pot of salted water. Cook them until they are tender, then drain them well.
Cut the carrots into pieces and dice the onions. Put the carrots, onions and cubed ham in a second pot with water and a small amount of salt, and cook until the carrots are soft.
Drain the carrot pot, but keep the cooking liquid in a separate bowl. You will use it to loosen the mash.
Combine the potatoes, carrots, onions and ham in one pot and mash them together. Add the butter in 2 to 3 chunks as you mash.
Stir in enough of the reserved carrot liquid to bring the mash to the texture of mashed potatoes. Season with salt and pepper, and add cheese to your liking before serving.
