Ibyer (Nigerian Millet Porridge)

Ibyer is a millet porridge from the Tiv people of Nigeria, made from just flour, water, ginger and sugar. The ginger gives the plain grain a warm, peppery edge, and the sugar is adjusted to your own taste. It cooks in a few minutes, so it works for a quick morning meal. Traditionally it is eaten with bread and milk, which makes a filling, simple plate.

Instructions

Bring a pot of water to a boil over the heat.

Whisk or stir the millet flour into the boiling water a little at a time, then add the ginger and sugar.

Keep stirring without stopping so no lumps form as the porridge thickens.

Cook for a few minutes, until the porridge is smooth and thick, then taste and add more sugar if you want it sweeter.

Serve hot, with bread and milk on the side.
