Igbindodo (Nigerian Snail and Plantain Stew)
Igbindodo is a Nigerian party dish that pairs fried snail with sweet fried plantain in a spicy tomato and pepper sauce. The name says it all: igbin is snail and dodo is fried plantain. The snail is marinated, then fried before it goes into the sauce, which gives it a firmer, browned bite. The plantain is folded in at the very end so it stays whole and sweet against the heat of the scotch bonnet.
Instructions
Wash the snail meat and cut each piece in half lengthwise.
Toss the snail with the red bell pepper, ground chili pepper and some of the seasoning cubes. Leave it to marinate for at least 20 minutes.
Heat oil in a pan and fry the diced plantain until golden brown. Lift it out of the oil and set it aside.
Fry the marinated snail in the same pan, then remove it from the oil.
Blend the tomatoes, scotch bonnet peppers and onion into a smooth paste.
Heat some of the leftover frying oil in a pot. Add the paste and the remaining seasoning cubes, and cook for a while.
Stir in the fried snail and cook until the liquid has evaporated and the sauce is thick.
Add the diced carrots, then the diced peppers, and take the pot off the heat.
Fold in the fried plantain gently so it does not mash, and add salt to taste. Serve hot with fruit juice.
