Imitation Caramel Sauce (Vegan)

This vegan caramel-style sauce is ready in about six minutes and never requires you to caramelize sugar. That skips the step where most home cooks scorch a pan or crystallize a batch. Turbinado sugar and maple syrup supply the deep, toasted sweetness, while arrowroot gives body without dairy. It keeps in the refrigerator and reheats easily, so one batch can cover several desserts.

Instructions

Pour the non-dairy milk into a small saucepan and add the turbinado sugar and maple syrup. Whisk well until everything is combined.

Set the pan over medium heat and cook for 3 minutes, whisking now and then.

In a small bowl, stir the water and arrowroot together until smooth. Whisk this mixture into the saucepan.

Keep cooking for another 2 to 3 minutes, whisking without pause, until the sauce thickens.

Take the pan off the heat and whisk in the remaining ingredients, which are the granulated sugar, vegan margarine and vanilla.

Serve the sauce right away, or pour it into an airtight container and refrigerate. Reheat it when you want to use it.
