Indian Chai
Indian chai is a single cup of tea simmered right in the milk, so the leaves, spice and sweetener all cook together in one small pan. The method is quick, and a dash of chai masala gives it a warm, spiced character. Ordinary supermarket tea works well, and you can adjust the milk, sweetness and brewing time to suit yourself. Ginger, cinnamon or tulsi leaves are easy additions.
Instructions
Put the water, milk, tea leaves, sweetener and chai masala together in a small saucepan.
Bring the mixture to a boil, then lower the heat and let it simmer for no more than a minute. If you like a stronger tea flavor, simmer it a little longer.
Strain the tea into a cup and drink it while it is hot.
For a stronger cup, boil about ¾ cup of water, add the sugar and tea, turn off the heat and cover the pot with a lid. Strain the black tea into a cup, then add hot milk to taste.
