Iresi eyin is a Yoruba palm oil rice cooked in one pot, and it is a different dish from the better known Nigerian party jollof. The rice takes its flavor from palm oil heated until it changes color, then fried with locust beans and tomato paste. Dried fish and ground crayfish add a savory, smoky depth. Carrots and peas go in alongside, so the whole meal comes together with very little fuss.

Instructions

Wash the rice and parboil it for about 8 minutes. Drain it well and set it aside.

Heat the palm oil in a large, clean pot until the oil changes color.

Add the locust beans, chopped onion, tomato paste, pepper powder and a little water. Fry the sauce until its smell changes and turns more fragrant.

Stir in the crayfish, the shredded dried fish, the carrots and the peas, and season with salt to taste. Add the parboiled rice and mix everything together in the pot.

Simmer over medium heat for about 25 minutes, until the liquid has been absorbed and the rice and vegetables are cooked through.
