Irio (Kenyan Mashed Potatoes with Veggies)

Irio is a Kenyan staple that mashes potatoes, green peas and corn into one rustic, pale green dish. Everything cooks together in a single pot with very little water, so the vegetables absorb their own flavor instead of losing it down the drain. The sweet corn kernels and tender peas stay visible in the mash, giving texture to every spoonful. It is common across East Africa and needs only salt and pepper.

Instructions

Put the quartered potatoes, green peas and corn together in a pot. Pour in enough water to cover the potatoes, but not so much that they float freely.

Cover the pot and simmer for about 15 to 20 minutes. The potatoes are ready when a fork slides in easily but they have not fallen apart.

Check the water at the end of cooking. Ideally it has nearly boiled away, but if a lot remains, drain most of it and leave just a little in the pot so the mash comes together easily.

Mash the potatoes, peas and corn together until combined. Season with salt and black pepper to taste, then serve.
