Island Salsa Salad

Island Salsa Salad is a chunky, chilled mix of avocado, mango, pineapple and jicama that eats like a salsa but fills a bowl like a salad. The sweet fruit is held in check by lime juice, serrano chili, cumin and a generous handful of mint and cilantro. Scalding the minced red onion first takes off its raw bite, and the jicama adds a cool, crisp crunch against the soft avocado.

Instructions

Put the minced red onion in a colander or strainer set inside a bowl. Pour about a quart of boiling water over it and leave it to stand while you prepare everything else.

In a medium bowl, combine the diced avocados, minced chilis, cilantro, cumin, garlic, jicama, lime juice, diced mango, mint, minced pineapple, and salt. Start with the smaller amount of salt.

Drain the scalded onion well and add it to the bowl.

Stir everything together thoroughly but gently, so the avocado stays in pieces rather than turning to paste.

Cover the bowl tightly and chill for about 2 hours so the flavors can blend. Serve cold.
