Italian Seasoning
Italian seasoning is a dried herb blend you can mix at home in a minute, and making it yourself lets you decide how much of each herb goes in. This version builds on basil, marjoram, oregano and sage, with rosemary, thyme, savory, garlic powder and red pepper flakes as optional extras. Start with equal parts, then shift the balance toward whatever you cook most often.
Instructions
Measure out equal amounts of each dried herb and spice you are using. The source gives no quantities, so start even and adjust later.
Combine everything in a bowl and stir until the mixture looks evenly blended. For a finer texture, pulse it in a food processor for about a minute instead.
Taste a pinch and adjust the balance to suit you. Basil, marjoram, oregano and sage are the core of the blend, and the other ingredients can be reduced or left out.
Transfer the mix to an airtight container and keep it closed between uses. Make only as much as you will use, and discard whatever is left after about a year.
