Jal-jeera is an Indian drink built around toasty cumin, and this single-glass version takes about a minute to mix. Green mango powder gives a dry, sharp sourness, while black salt adds a faint sulfurous savor that sets it apart from ordinary lemonade. Mint paste brings a cool, green note. Because it is mixed straight into soda water, the drink stays light and sparkling, and it suits a hot afternoon.

Instructions

Grind the mint leaves to a smooth paste, then measure out a quarter teaspoon of it.

Put the cumin powder, green mango powder, black salt, mint paste and lemon juice into a tall glass.

Pour in the plain soda water and stir until the spices are spread through the drink and no clumps of paste remain.

Serve the jal-jeera straight away, while the soda is still fizzing.
