Jalapeno Eggs

Jalapeno eggs are fried eggs finished with pickled jalapenos and melted cheese, served on buttered whole-wheat bread. The eggs are cooked in reserved bacon grease, which gives them a smoky edge without any extra seasoning. A splash of pickle juice over the jalapenos adds sharp heat that cuts through the cheese and yolk. Fried onions, warm tomato beans and crisp bacon make it a full plate for two.

Instructions

Chop the onion and fry it until softened, then set it aside. Warm the tomato beans in a small pan over medium heat.

Fry the bacon and set it aside, keeping the bacon grease in the pan or in a bowl for the eggs. Slice the bread and spread margarine on it generously.

Heat a frying pan with the reserved bacon grease. Add 2 eggs and fry them without breaking the yolks.

When the eggs are nearly done, push the egg white back from each yolk so the yolk sits clear. Chop the pickled jalapenos, scatter them over the eggs, and add a little of the pickle juice.

Sprinkle shredded cheese over the eggs, cover the pan with a lid, and leave it until the cheese has melted. Repeat with the other 2 eggs.

Serve the eggs on the bread, with the onions, tomato beans and bacon alongside.
