Jamaican Jerk Spice

This Jamaican jerk spice is a hot, dry rub you can mix from the pantry in a couple of minutes. Cayenne supplies the heat, while allspice, cinnamon and nutmeg give the warm, sweet backbone that jerk is known for. Thyme and onion round it out, and a spoonful of sugar helps the surface of the meat brown. Rub it on meat before grilling or roasting.

Instructions

Measure all the spices, the thyme, the sugar, the onion powder, the dried minced onion and the salt into a small bowl.

Stir everything together with a spoon until the mixture looks even in color and no clumps of sugar or salt remain.

Spoon the finished mix into a clean container with a tight-fitting lid and seal it. Keep it closed between uses so the spices stay dry and fragrant.
