Jamaican Jerk Spice

This jerk spice is a dry rub built mostly on allspice, which makes up four tablespoons against one of everything else. That heavy hand gives the mix its warm, clove-like depth, the signature of Jamaican jerk. Thyme, paprika and ground red pepper add herbal notes, color and heat, while garlic and onion powder round it out. It takes a few minutes to mix, keeps in a jar, and suits meat bound for the grill or oven.
Instructions
Measure all of the spices into a small bowl, using the amounts in the ingredient list.
Stir or whisk them together until the color is even and no pockets of any one spice remain.
Pour the mix into a clean, dry jar or other container with a tight lid. Keep it closed between uses so the spices stay fragrant.
