Käsekrainer (Austrian Sausage with Accompaniments)

Käsekrainer is the cheese-filled sausage sold at Vienna's Würstelstand, and it is easy to cook at home. The cheese melts inside the meat as it heats, which is why pricking the casing first matters. Austrians treat it as a base for building your own plate, from black bread or a baguette to pickled cucumber, sliced onion, grated horseradish and mustard. The recipe also suggests a hot dog version and a toasted Kafka sandwich.
Instructions
Prick the sausage all over with a fork so the filling can release steam without splitting the casing.
Cook the sausage by boiling, baking or grilling at medium heat for about 8 minutes.
If you like, cut the sausage in two or into small pieces.
Serve the sausage with any of the breads, pickles, onions, horseradish and sauces. Sauces can go on top of the sausage or in a small pile on the side.
