Karedok (Indonesian Raw Vegetable Salad with Peanut Dressing)

Karedok is an Indonesian salad of raw vegetables tossed in a freshly pounded peanut dressing. Nothing here is cooked, so the cucumber, cabbage and bean sprouts stay crunchy against the nutty sauce. The dressing gets its depth from galangal, shrimp paste and palm sugar, with bird's eye chilli for heat. Fried shrimp chips go on at the end for a salty, brittle contrast to the cool vegetables.
Instructions
Put the red pepper, garlic, birds' eye chilli, galangal, peanuts, palm sugar, salt and shrimp paste into a mortar. Pound them together until the peanuts are broken down and everything forms a coarse paste.
Stir in the brackish water and the hot water. Mix well until the paste loosens into an even dressing.
Add the cucumber, bean sprouts, thinly sliced cabbage, legumes, Thai basil and eggplant to the dressing. Toss until every vegetable is coated.
Top the salad with fried shrimp chips and serve right away, so the chips stay crisp.
