Killer Queso Dip
Killer Queso Dip is a Tex-Mex style chile con queso made with just three ingredients and a bag of chips. Hot pork sausage gives the dip its heat and a savory, meaty backbone, while Velveeta melts into a reliably smooth base that does not split or turn grainy. Canned tomatoes with green chiles add tang and mild spice. You can make it on the stove or hold it in a slow cooker.
Instructions
Brown the hot sausage in a saucepan or skillet, breaking it up as it cooks. Drain off the grease once no pink remains.
Cut the Velveeta into cubes. Add the cheese to the pan with the canned tomatoes and green chiles, diced if they are not already.
Heat over low, stirring often, until the cheese has melted and everything is evenly blended into a smooth, chunky dip.
For a slow cooker, melt the cubed cheese with the tomatoes and chiles in the cooker, stirring as it softens. Add the browned, drained sausage and stir until it is well mixed into the melted cheese.
Serve warm with tortilla chips or fritos for scooping.
