Kiwi and Asian Pear in Lemon Dressing (Kiwi to Nashi no Lemon Ae)
Kiwi and Asian pear in lemon dressing is a cold Japanese salad of fruit and crisp vegetables tossed in a sharp, lightly sweet citrus dressing. The pear stays crunchy and the kiwi turns tart and juicy, while cucumber and bell pepper add color and snap. A few drops of sesame oil and a sprinkle of black sesame seeds give the lemon a nutty edge. It needs no cooking, only an hour in the fridge.
Instructions
Put the grated lemon peel, lemon juice, sugar, salt and sesame oil into a serving bowl. Whisk until the sugar and salt have dissolved, then set the bowl aside.
Prepare the fruit and vegetables by cutting each into thin, even strips. Peel and slice the kiwifruit, slice the pear, and cut the bell pepper. Halve and seed the cucumber before cutting it.
Add all the strips to the dressing in the bowl and toss gently until everything is coated. Cover the bowl and chill it for about an hour so the flavors can meld.
Toss once more just before serving, and scatter the roasted black sesame seeds over the top.
