Kugelis (Lithuanian Baked Potato Pudding)

Kugelis is a Lithuanian baked potato pudding, also known as bulvių plokštainis, or "flat potato dish". Grated potatoes and onions are bound with eggs, evaporated milk and melted butter, then studded with crumbled bacon and its drippings. The result bakes into a dense, sliceable pan with a crisp top. Serve squares with sour cream, as is traditional. Leftovers are excellent sliced thin and browned in butter, and the pudding freezes well.
Instructions
Peel and grate the potatoes and grate the onions, then combine them in a large bowl. Do not drain the liquid that collects, as it stays in the pudding.
Fry the bacon until cooked through, then crumble it. Stir the bacon into the potato mixture along with about ¼ cup of the bacon fat, and mix well.
Beat the eggs in a separate bowl, then stir in the evaporated milk, melted butter, salt and pepper. Pour this into the potato mixture and mix until evenly combined.
Pour the batter into a well-greased 9x13-inch cake pan. It should just barely fit.
Bake at 350°F (175°C) for 90 minutes. Cut into squares and serve topped with sour cream or applesauce.
To reheat leftovers, slice them thin and sauté in melted butter. The kugelis also reheats well in the microwave and freezes well.
