Kuli kuli is a crunchy Nigerian peanut snack that starts with nothing more than roasted groundnuts and ginger. The cook grinds the nuts, then squeezes out as much oil as possible before frying, and that pressing step is what gives the finished pieces their dry, snapping bite. The snack comes from northern Nigeria and is now eaten across the country. Shape it however you like, and add chilli if you want heat.

Instructions

Grind the roasted groundnuts together with the ginger until the mixture is smooth but still holds a little texture. Stop before it turns into a completely wet paste.

Squeeze the ground mixture firmly to press out as much oil as you can. This step matters most, because the less oil left in the paste, the crunchier the finished kuli kuli will be.

Shape the paste into any form you like, such as small sticks, rings or balls. Keep the pieces fairly even in size so they fry at the same pace.

Heat the groundnut oil in a frying pan or pot. A little minced onion can go into the oil for extra flavor, and chilli pepper can be added if you want heat.

Add the shaped pieces to the hot oil and fry until they turn crunchy.

Lift the pieces out of the oil and drain off the excess. Let them cool completely before eating or storing, as they firm up as they cool.
