Kunun tsamiya is a millet drink from northern Nigeria that gets its character from tamarind, which gives it a sharp, fruity sourness. Ground cloves, dried ginger and dried pepper add warmth and a mild bite, so each cup tastes spiced as well as sweet. The method is quick: grind, mix a paste, then stir in hot tamarind water. You can make it thick or thin to suit your taste.

Instructions

Grind the ginger, cloves, millet and dried pepper together until the powder is smooth, then tip it into a large bowl. Stir in just enough water to make a thick paste.

Put the tamarind and water in a pot and set it over the heat. Let it boil for a few minutes so the tamarind flavors the water.

Pour the hot tamarind water slowly into the millet paste, stirring the whole time. Keep stirring until the drink is smooth and free of lumps.

Stir in sugar a little at a time, tasting as you go, until it is as sweet as you like. Serve it right away, adding more water if you want a thinner drink.
