Kwado (Nigerian Cassava Flour Salad)
Kwado is a Nigerian cassava flour salad that needs no stove at all, which is why it is also called coldmeal. It is a staple of boarding house students, who mix it in a single bowl. Smoked dried fish gives it a deep savory base, ground kuli kuli adds a nutty, peanut note, and rinsed raw onion keeps the whole thing sharp. A splash of water softens the garri if you prefer it moist.
Instructions
Put the smoked dried fish in a bowl and mash it with a fork or the back of a spoon until it breaks into small flakes.
Add the garri, the ground kuli kuli, the sliced and rinsed onions, salt and dry pepper to the bowl.
Stir everything together until the fish, onion and seasoning are evenly mixed through the garri. Taste and adjust the salt and pepper.
If you want a softer, more moist texture, sprinkle in a little water and stir again. Serve right away, since nothing here is cooked.
