Lekhchef (Algerian Raisin Drink)
Lekhchef is a chilled raisin drink from Constantine in eastern Algeria, and it takes about ten minutes of work. Raisins simmer with cinnamon until the water turns sweet and amber, then orange blossom water and rose water add a floral scent once it has cooled. Serve it very cold, with the plump raisins left in the glass to eat, or blend it for a thicker drink.
Instructions
Put the water and cinnamon sticks in a saucepan and bring to a boil.
Add the rinsed raisins to the boiling water, turn the heat down to low, and let them simmer.
Stir in sugar to taste. Keep the heat very low and stir until the sugar has fully dissolved.
Take the pan off the heat, lift out the cinnamon sticks, and leave the drink until it has cooled completely.
Stir in the orange blossom water and the rose water.
Chill the drink in the refrigerator and serve it very cold, with or without the raisins in the glass. If you blend the mixture, leave out the sugar, since the blended drink can turn out too sweet.
