Lemon Icing

Lemon icing made with a single egg yolk gives you a smooth, pale yellow topping in about the time it takes to melt butter. The yolk adds richness and body, while the lemon juice keeps the sugar from tasting flat, and the pinch of salt rounds it out. It takes four ingredients and one bowl. Spread it on a plain cake or cookies, and add sugar if you want it thicker.

Instructions

Put the egg yolk into a small bowl, taking care that no shell falls in.

Pour in the lemon juice and add the pinch of salt. Beat the mixture lightly with a fork or small whisk until the yolk is broken up and blended with the juice.

Beat in the confectioner's sugar a little at a time, mixing well after each addition. Stop when the icing is smooth and spreadable.

If you want a stiffer icing, beat in a little more powdered sugar until it holds its shape.
