Lemon sharbat is a quick, savory-sour cooler that takes only a few minutes to make. Black salt is the ingredient that sets it apart, adding a sulfurous, almost smoky tang that plain table salt cannot give. Black pepper adds a gentle heat, and just one teaspoon of sugar keeps the lemon from turning harsh. Because you season it to taste, you can adjust each glass to suit your own palate.

Instructions

Pour the water into a tall glass and add the fresh lemon juice.

Stir in the sugar and the pinch of salt until you can no longer see any grains at the bottom of the glass.

Add black pepper and black salt a little at a time, tasting as you go, until the drink is as sharp and savory as you like it.

Stir well once more, then pour over ice and serve right away.
