Extra-Sour Lemonade
Extra-sour lemonade is a quick pitcher drink made from fresh lemon juice, water and sugar, ready in about 15 minutes. The ratio is tilted toward the lemons, so it tastes sharp and bright instead of sugary. Superfine sugar dissolves easily in cold water, and rolling the lemons before juicing gets more out of each one. The sugar can be moved up or down by a quarter cup, so you can tune the tartness.
Instructions
Roll each lemon on the counter under moderate pressure, which helps it give up more juice. Halve the lemons and juice them on a citrus reamer, keeping the seeds out. You need 1 cup (250 ml) of juice in total.
Strain the juice if you prefer lemonade with no pulp.
Stir the sugar into the water until it dissolves completely. A little warmth helps if you are using a larger amount of sugar.
Pour the lemon juice and the sugar water into a pitcher and stir well. Taste it, and if you want it sweeter or tarter, adjust the sugar by up to ¼ cup (55 g/1.9 oz) either way.
Chill the lemonade in the refrigerator, or pour it over ice cubes and serve right away.
