Liberian Potato Greens
Liberian potato greens is a one-pot dish of sweet potato leaves fried in oil with onions and cubed meat, popular across West Africa. The greens are fried first and then simmered in a little seasoned water until it cooks off, so they end up tender and well flavored by the bouillon, onion and pepper. Use sweet potato leaves only, since white potato greens are toxic. A pinch of baking soda keeps the color bright.
Instructions
Wash the sweet potato greens thoroughly, then strip the leaves from the stems. Chop the leaves into small pieces and set them aside.
Heat a few tablespoons of oil in a large pot. Add the chopped onions and the cubed meat and cook until the meat is almost done, then lift everything out of the pot and set it aside.
Put the chopped greens into the same pot and fry them for about 15 minutes, stirring often so they do not burn. They are ready for the next step when they have turned tender.
Pour in enough water to cover the greens. Season with seasoned salt, onion powder, crushed bouillon cubes and ground pepper, tasting as you go.
Cook over medium heat, stirring frequently, until all the water has cooked away. Serve the greens hot.
