London Fog

A London Fog is an Earl Grey latte sweetened with vanilla and topped with steamed milk. The drink comes from Vancouver, where one story credits a pregnant regular at the Buckwheat Cafe in 1996 who wanted something other than coffee. The bergamot in the tea stands up well to the milk, and the vanilla rounds it off without making it sugary. It is also easy to vary with other teas, soy milk or honey.

Instructions

Put the tea bag in a mug and pour the boiling water over it. Let it steep for 2 to 4 minutes, until you have a strong Earl Grey concentrate.

Warm the milk, using a steamer if you have one. Stir the vanilla syrup into the hot milk.

Pour the vanilla milk into the mug of tea, adding as much as you like. Taste and adjust the balance of tea, milk and syrup until it suits you.
