Louis Dressing
Louis dressing is a creamy, pink seafood dressing with a mild kick, traditionally spooned over Crab Louis and Shrimp Louis. This version skips the chopped onion and chile sauce of the classic and uses ketchup and a green chile salsa instead, so a blender does all the work. The result is smooth, tangy and easy to get right on the first try. It also works well as a dip or sandwich spread.
Instructions
Put the mayonnaise, salsa, ketchup, lemon juice, Worcestershire sauce and hot sauce into a blender. Add the hot sauce a little at a time if you are unsure of the heat, since you can always add more later.
Blend until the mixture is completely smooth. It should look like a pink sauce with small green flecks from the chile peppers in the salsa.
Pour the dressing into a bowl and cover it. Chill it in the refrigerator for at least 30 minutes before serving, and keep any leftovers refrigerated.
