Macho Nachos
Macho Nachos is a loaded tray of chips built almost entirely from store-bought parts. The bean dip is spiked with cayenne pepper sauce before it goes on the chips, so the heat sits underneath the cheese instead of only on top. A short bake melts the cheddar, then cool guacamole and sour cream balance the jalapeños. The recipe is credited to Jack Cochran.
Instructions
Stir cayenne pepper sauce into the bean dip a little at a time, tasting as you go, until it is as hot as you like.
Spread the spiced bean dip over the tortilla chips and move the chips to a baking sheet.
Sprinkle shredded cheddar over the chips. Bake at 400°F for about 2 minutes, or until the cheese has melted.
Top the hot chips with spoonfuls of guacamole and sour cream. Finish with a generous scattering of sliced jalapeño peppers and serve right away.
