Madras Filter Coffee

Madras filter coffee is a hot, milky, chicory-backed South Indian coffee that you can approximate at home with a spoonful of instant. The chicory gives it a deeper, slightly bitter edge that plain coffee lacks, and Indian instant blends such as Nestle Bru, which contains 30% chicory, come close to the real thing. The high pour into a steel tumbler builds a proper froth without any machine.
Instructions
Bring the water to a boil in a small pan, then stir in the instant coffee until it dissolves completely and no lumps remain.
In a separate saucepan, bring the milk to a boil.
Pour the coffee mixture into the boiling milk and stir in sugar to taste.
While the coffee is still boiling hot, pour it into a mug or, better, a stainless steel tumbler. Raise the saucepan slowly as you pour so the coffee falls from a height of about 1 to 1½ feet, which makes it froth like espresso.
If you like, dip a teaspoon in the coffee and lightly spread a few drops over the froth. Serve piping hot.
