Mango Avocado Salsa

This mango avocado salsa takes about as long to make as it does to dice the fruit. Ripe mango adds sweetness that plays against creamy Hass avocado, while red onion, jalapeño and a full cup of cilantro keep it sharp and fresh. Lime juice seasons the bowl and slows the avocado from browning. Put it out with tortilla chips, or spoon it over grilled meat or fish.

Instructions

Dice the red onion, then seed and mince the jalapeño. Chop the cilantro, using a small bunch that fills about a cup when packed.

Peel, core and dice the avocados, and do the same with the mango. Aim for pieces of similar size so every spoonful has both fruits.

Tip the onion, jalapeño, cilantro, avocado and mango into a medium bowl. Squeeze the juice of one lime over the top.

Season with salt and pepper, then stir gently with a spoon until everything is evenly mixed. Taste and add more salt or pepper if needed.

Serve right away with tortilla chips, or spoon it over another dish as a topping.
