Mango Chutney (Chunky)

Chunky mango chutney is a sweet, sharp relish built on firm under-ripe mangoes, which hold their shape through the long simmer instead of dissolving into jam. The cider vinegar and brown sugar give it a tangy, caramel backbone, while raisins, ginger, garlic and a little cayenne keep it lively. It comes from Andhra Pradesh, and it is good with poppadoms, rice, bread or yoghurt.

Instructions

Pour the vinegar into a large pot and stir in the sugar and salt until both dissolve. Bring it to a boil and let it bubble for 15 minutes.

Add the cubed mangoes, raisins and chopped onion. Bring the pot back to a boil.

Turn the heat down to low and simmer for 15 minutes. Stir constantly so the sugary mixture does not catch on the bottom of the pot.

Stir in the garlic, ginger, cayenne and black pepper, then simmer for another 5 minutes.

Take the pot off the heat and let the chutney cool completely before serving. Store it in the refrigerator, where the sugar and vinegar keep it for up to 6 months.
