Mango Chutney (Smooth)

This smooth mango chutney is made with unripe mango, so it is sharp and tart rather than sweet. The flavor comes from a quick tempering: mustard seeds, asafoetida and chiles are popped in hot oil, then ground straight into the raw fruit with turmeric and salt. There is no long simmering, and the whole thing comes together in one pan and one grinder.

Instructions

Peel the raw mango and cut the flesh into 1-inch cubes. Set them aside while you prepare the spiced oil.

Heat the oil in a frying pan. Add the mustard seeds, asafoetida, green chiles and dry red chiles.

Watch the mustard seeds closely. When they start to splutter and pop, take the pan off the heat right away.

Tip the hot spiced oil and everything in it into a grinder or blender. Add the mango cubes, the turmeric and the salt.

Taste the mango before you grind it. If it is not sour enough, add the lime juice as well. Grind until the chutney is smooth, then taste and adjust the salt.
