Marzipan Muffins
Marzipan Muffins are tender oatmeal muffins with almond sweetness worked right through the crumb. Instead of hiding a filling in the middle, you beat the marzipan into the butter, eggs and milk, so every bite tastes of it. Fine oatmeal gives the crumb a soft, slightly nutty body, and vanilla sugar rounds out the flavor. The batter comes together in two bowls and bakes in about 25 minutes.
Instructions
Cut the marzipan into very small dice, or mash it with a fork until it is broken into fine crumbs. Beat it together with the butter, milk and eggs until the mixture is well combined.
In a separate bowl, stir together the flour, sugar, oatmeal, baking soda and vanilla sugar. Add the dry mixture to the marzipan mixture and mix until you have a smooth batter. If the batter feels stiff and dry, stir in a little more milk.
Set the muffin tins on a baking sheet and divide the batter among them. Bake at 180°C for 20 to 25 minutes.
Let the muffins cool, then decorate with chocolate icing and sprinkles if you like. The recipe makes 14 muffins.
