Mascarpone Glazed Strawberries
Mascarpone Glazed Strawberries are berries browned in butter and finished in a rum, coffee liqueur and mascarpone glaze. Searing the fruit first deepens its flavor before it ever meets the sauce. Flaming the rum lifts the browned bits off the pan, so they end up in the glaze. The sauce cooks down with sugar and cream into something rich and slightly bitter from the coffee. A simple, grown-up way to treat a pound of strawberries.
Instructions
Melt the butter in your largest stainless steel sauté pan over medium heat. Add the sliced strawberries and cook until they are deeply browned, then remove them from the pan and keep them warm.
Pour the rum into the empty pan and ignite it. Stir to dissolve the browned bits from the bottom of the pan.
Add the mascarpone, coffee liqueur, cream, salt and sugar. Boil the mixture until it has reduced by one third.
Return the strawberries to the pan and lower the heat to low. Cook for half an hour.
Take the pan off the heat and serve.
