Mazagran (Algerian Iced Coffee)

Mazagran is an Algerian iced coffee made with black coffee, lemon juice and sugar over ice. It takes its name from the town of Mazagran, and the story goes that French troops held in the fortress there invented it, then carried it to Parisian cafés. The lemon gives the coffee a sharp, clean edge that milk-based iced coffees lack, and the whole drink comes together in ten minutes.
Instructions
Fill a tall, narrow glass with ice cubes, packing it generously so the coffee chills quickly.
Pour the brewed black coffee over the ice. The cubes will shift and settle as the coffee goes in.
Add lemon juice and sugar a little at a time, stirring and tasting as you go. Stop when the drink is sweet enough to take the edge off the lemon and the coffee bitterness.
If you like, set a lemon slice or wedge on the glass or drop it in as a finishing touch.
